Every once in a while I have a craving for spagetti and usually it’s with an unhealthyish sauce.
This recipe is quick, delicious and dangerous.
2 garlic cloves minced
Half onion diced
1 celery stalk diced
3 or 4 mushrooms
1/2 green pepper chopped
1 cup of spinach
1/2 cup frozen peas
1 cup chicken or vegetable stock (bouillon cube added to water)
1/2 cup milk or cream
1/3 block cream cheese
Shredded cheese such as parmasean or mozzarella
Salt and pepper to taste
Add first 4 ingredients to pan with olive oil
Cook for a few minutes til onions are clear.
Add stock and other veggies.
Add milk and cream cheese and simmer.
I like chunks of cream cheese in mine but if you prefer you can stir it until it’s just creamy.
Make your choice of pasta.
Add the cheese, salt and pepper and enjoy with a glass of wine and a good movie 🙂
Note: all the ingredients can be altered. If you would like more or less of anything you can and it would taste just as good. You can also add shrimp or chicken to it as well.
