Easy quinoa curry

This is a quick and delicious curry. I used left over quinoa but it also works well with rice noodles or rice. I only had shrimp in my freezer but chicken would work well too.

Ingredients:

  • Quinoa or rice
  • Celery
  • Garlic 
  • Onion
  • Shredded carrots
  • Coconut oil 
  • Mushroom soup
  • Mushroom
  • Turmeric 
  • Curry
  • Milk
  • Shrimp (or chicken)
  • Green pepper

Directions:

Heat oil, garlic, onion, Greek pepper, celery.  Add mushrooms. Heat until onions are clear. Add carrots, shrimp, mushroom soup and milk. Add spices and cooked quinoa. Blend until everything is cooked. Enjoy!
