Seafood coconut curry

Ingredients:

1 cup rice

11/4 cup coconut water

1tbsp coconut oil

3 spring onions chopped

1 red or orange pepper chopped

1/2 cup frozen spinach

1 can coconut milk

1/2 tsp turmeric

1/2 tsp curry powder

Salt and pepper

1/2 cup shrimp frozen or thawed

3 or 4 pieces of white fish.
Directions:

Cook oil, onions and peppers together add the rice and coconut water. Simmer for 10 mins.

Add the rest of the ingredients with the fish on top. Simmer until rice is cooked and fish is flakey. Top with fresh basil (optional) and enjoy!
