Blueberry Flax buckwheat Pancakes

Ingredients:

  • 1 cup buckwheat flour
  • 3 tbsp ground flax
  • 1 tbsp coconut sugar
  • 1 tsp baking powder
  • 1tsp baking soda
  • 1 1/4 cup buttermilk
  • 1tbsp vanilla
  • 1 egg
  • 1/2 cup blueberries (or other berries)
  • 1 tbsp butter (for pan)

Directions:

1. Combine dry ingredients

2. Combine wet ingredients

3. Mix together until just blended

(It gets fluffier if left to sit for a couple hours before cooked)

Makes about 8 smaller pancakes
