Easy eggless pineapple coconut cake

Found this receipe online and adjusted it to make it my own:

Ingredients:

  • 2 cups flour
  • 1.5 cups white sugar
  • 2tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 can pineapple with juice
  • 1 tsp vanilla
  • Walnuts

Icing:

  • 1 cup butter 
  • 3/4 cup brown sugar
  • 1 can light coconut milk
  • 1/3 cup cream

Directions:

Mix all dry ingredients together by hand. Add pineapple and juice and the vanilla. Put into greased 9x 13 or 8×11 pan. Add nuts (if you don’t have walnuts, almonds or pecans would taste really good too) Bake at 350 f for 30-40 minutes (mine was still runny inside at 30 minutes)

Meanwhile: 

Boil the coconut milk and cream until there’s about half left. (About 15 minutes) add butter and brown sugar and boil for another few minutes.

Take out the cake – poke holes in the cake with a fork. Add the icing and enjoy! Tastes really good warm!
