Chocolate Cake Day!

Earlier this week my co-worker notified me that it was Chocolate Cake Day on Wednesday.  I took that as a hint and a challenge to bake a cake. I had two challenges:

  1. Something that would be easy to eat since we often eat quickly in between clients
  2. Did not have a lot of cocoa

It was quick, delicious and most importantly a hit at my office and at home.  I highly recommend it and the vanilla icing!

  
 

Gluten free cookie dough truffles 

I make these truffles every year and earlier this year I posted this receipe. 

I decided to change it up this time and I think it tastes better than ever:

 

Ingredients:

1/2 C butter, softened

3/4 C coconut sugar

2 1/4 C gluten free flour

1 -14 oz. can carmel condensed milk

1 t vanilla

1/2 C Skor Chips

2 -12 oz bags semi sweet chocolate chips (I used 1 bag of chocolate and bitter chocolate squares. plus 1/2 bag of Reeses peanut butter chips)

1/4 C reeses peanut butter chips

Sprinkles, coconut (shredded, sweetened or unsweetened)

1. Cream your butter and coconut  sugar together until light and fluffy.

2. Add the gluten free flour, sweetened condensed milk and vanilla and mix well.

3. Stir in the Skor chips

4. Shape into 1 inch balls and place on a sprayed cookie sheet. Cover with saran wrap and freeze for 1-2 hours. (1 hour worked for me)

5. In a bowl on the stove melt the chocolate chips 

6. Dip each frozen cookie dough ball  into the melted chocolate. Dip the dough ball into coconut or skor chips or add on sprinkles.

7. Melt the Reeses peanut butter chips in the microwave. Stir it well and then drizzle it over the tops of the truffles – that you left with just chocolate.

7. Put the truffles back in the fridge to set for about 15 minutes.

Remember to either keep frozen or in the fridge when not eaten right away.

  

 

Heavenly Whipped Shortbread

This shortbread receipe is delicious and so easy to make. It works best with a mixer such as a kitchenaid or a hand mixer.  

Ingredients:

  • 1 cup butter, softened
  • 1/2 cup icing sugar
  • 1 1/2 cups flour

Whip butter and icing sugar for about 3-5 minutes.

Slowly add in the flour, stopping to push down the batter from the edges of the bowl. Whip it for at least 6 minutes – the longer you whip it, the lighter it ends up being.

Scoop it out using a small ice cream scoop or your hands rolling them into balls.  

Decorate with cherries, nuts or chocolate or just leave them plain.

Cook at low temp – 275 for 30-35 mins until lightly brown.

quick delicious chocolate dessert

  • 1/4 cup buckwheat flour
  • 2 tablespoons cocoa
  • 5 tablespoons coconut sugar
  • 1 tablespoon shredded coconut
  • 3 tablespoons milk
  • 3 tablespoons oil 
  • 1 teaspoon vanilla
  • 1 egg
  • 1 tsp salt

Mix all ingredients together in a mug (large one like a “Friends” style mug) microwave for about 2 minutes – it will start to rise. Enjoy with or without ice cream or yoghurt. Can substitue for regular sugar and different flours.

Ah-mazing Chocolate Skor Cookie Dough Truffles!

I discovered this recipe a few Christmases ago and made them for gifts for family. Ever since they have been a staple for baking at my house.  These truffles look very pretty in a clear bag with ribbon around it as a gift just make sure that they stay cool as they could melt.

Here is the recipe:

1/2 C butter, softened
3/4 C brown sugar, packed
2 1/4 C flour
1  -14 oz. can sweetened condensed milk
1 t vanilla
1/2 C Skor Chips
2   -12 oz bags semi sweet chocolate chips (I used 1 bag of chocolate and bitter chocolate squares. plus 1/2 bag of Reeses peanut butter chips)
1/4 C  reeses peanut butter chips
1 T shortening, divided
1. Cream your butter and brown sugar together until light and fluffy.
2. Add the flour, sweetened condensed milk and vanilla and mix well.
3. Stir in the Skor chips
4. Shape into 1 inch balls and place on a sprayed cookie sheet. Cover with saran wrap and freeze for 1-2 hours. (1 hour worked for me)
5. In a bowl on the stove melt the peanut butter chips.
Add about 2 t of shortening to the chocolate and stir to incorporate.
6. Dip each frozen cookie dough ball into the combination of Chocolate chips and Reese peanut butter chips that are melted and then place on wax paper.
7. Melt the Reeses peanut butter chips in the microwave and add 1 t shortening. Stir it well and then drizzle it over the tops of the truffles.
7. Put the truffles back in the fridge to set for about 15 minutes.

Chocolately Brownies!

Felt like baking and wanted something gooey and chocolately.  This recipe is quick and delicious.

Fry’s Cocoa Brownie Recipe:

Ingredients


  • 1 1/3 cups flour
  • 1 teaspoon  baking powder
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1 cup fry’s cocoa
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla

How to make it


  • Stir together flour, baking powder, and salt in small bowl.
  • Melt butter in a large saucepan. Remove from heat. Stir in cocoa.
  • Blend in sugar, eggs, and vanilla.
  • Blend in dry ingredients.
  • Pour batter into greased baking pan.
  • Bake at 350 degrees for 30 to 35 minutes or until done. Cool.

Cake challenge..accepted

For a few months I worked in a bakery where my main jobs were to wash dishes, help customers and occasionally bake cookies… Sounds glamorous, I know. My brother just turned 25 so I decided to try to make a fancy cake like I watched my manager do so many times.  I had a couple challenges that I had to overcome while baking it. 

– ran out of icing after the top (I put quite a bit of icing between the two layers) 

– the cakes got stuck in the pans and some of the bottom cake came off

– the cake was crumbly came came apart when I was icing the cake

So I improvised. I melted some chocolate chips and glued on chocolate bark which I had made yesterday.  

I then put some of the melted chocolate in a plastic bag and cut the corner off and wrote on the cake.

Although I had a couple challenges, I am quite impressed with how the cake actually turned out.

I look forward to improving my baking skills and eventually making really fancy cakes.
